That is, until today.
Sarah and I wanted to get together for lunch today, and since we're both *saving money* (i.e., overspent our cash for the week), I decided to make sweet potato nachos because I had all the ingredients! And, in fact, I had two small sweet potatoes and I was wondering what to do with them--one wouldn't be enough for the recipe, but two would be too much for me to eat by myself. Such a dilemma.
Thankfully, I've had several runs at the sweet potato nachos. I now know the ingredients without having to check my iPhone every 30 seconds, I have learned not to pre-heat my oven right away because I move at a glacial pace, and I did not slice my finger with a cheese grater! This is the epitome of human progress.
Long story short, Sarah loved the nachos! She said they were "delicious, simple, and healthy--that never happens." While I wouldn't ever market myself as a lunch/dinner host, it is nice to feed my friends, especially those (like Sarah) who have so graciously provided meals for me on many an occasion.
